Pan-fried cinnamon apples

1 · Apples
Quarter the apples, cut out the cores and slice each quarter into thickish wedges.
A round apple rolls under the knife. Halve it first and lay it cut side down — the rest is easy.
2 · Pan
Melt the butter in a pan over medium heat.
3 · Frying
Lay the wedges in a single layer, sprinkle with the sugar and cinnamon and cook for 5 minutes, turning a couple of times, until soft and golden.
Medium heat and no higher: on high the sugar and butter darken in seconds and turn bitter.
4 · Cool down
Turn off the hob and let the apples sit in the pan for a minute — they are hotter inside than they look.
5 · Serving
Divide the apples between two plates and top each with a scoop of ice cream. Enjoy!
