How to cook

1 · Ice cream

Take the ice cream out of the freezer and leave it on the counter for 5 minutes so it softens enough to scoop.

2 · Assembly

Put a spoonful of ice cream on the flat side of a biscuit, top it with a second biscuit flat side down and press gently so the ice cream reaches the edges.

Do not press hard — shortbread is brittle and snaps in half.

3 · Coat

Put the coconut on a plate and roll the edge of each sandwich through it so it sticks to the ice cream.

4 · Freeze

Set the sandwiches on a plate and freeze them for 10 minutes to firm up. Enjoy!
